I think it’s safe to say quarantine has channeled our inner bakers to come out & play! Maybe it’s the taste of a sweet desert that’s so comforting or making something from scratch that makes us feel invincible. Regardless, baking is serving us all well these days.

Lastly, there aren’t any unusual ingredients in this recipe which makes it fantastic! It’s a recipe you most likely can whip up anytime you feel like having cookies, your kiddos want a sweet treat or your husband is saying all the food is too healthy in the house {insert eye roll} 😉 So turn those ovens to 350 & let’s bake, baby!

- 1¾ C. Flour
- 1½ C. old fashioned oats
- 1½ C. light brown sugar
- ¾ C. melted butter
- 2 eggs
- 1 tsp vanilla extract
- ¾ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 4 oz semisweet chocolate chips
- Preheat Oven to 350
- Line baking sheet with silicone baking mats or parchment paper
- Mix melted butter & brown sugar until well-combined
- Whisk in eggs & vanilla
- Mix flour, baking powder, baking soda, and salt
- Whisk in the oats & add in the chocolate chips
- Roll into medium balls, line on cookie sheet 2 inches apart
- Bake 8-14 mins until light golden brown
- Store in sealed container
