Who loves naner bread??!! Most people have a favorite recipe that their Mom {or Grandma} makes. Let’s face it Moms baking is always a sweet reminder of home. Unless your Mama is a better cook than baker, which would be me. I have struggled with baking most of my life. Mostly because you have to follow recipes exactly which causes unnecessary anxiety and impatience for me. Ain’t nobody got time to measure….until I became a Mom & realized I needed to figure out this whole baking thing by the time Carter knows what a baked good is. SOUND.THE.ALARM!!!
Anyway, this turned out great according to my Husband, Mom, Dad, and Nephew. In fact, I think my Newphew’s eyes bugged out of his head as he ate the banana bread I poured my heart in to. Watching people enjoy my cooking {or in this case baking} brings me so much happiness.
Side note: I personally hate bananas {shocker} so I didn’t get to enjoy this glorious masterpiece.
When I cook/bake – I love to make recipes healthier & more nutritious. In this case making some banana bread without white flour, sugar and oil was the route I decided to go.
Here are the substitutes:
- Unsweetened Applesauce instead of Oil
- Honey &/or Agave (which isn’t pictured) instead of Sugar
- Brown Rice Flour instead of White Flour

- 2 Cups Brown Rice Flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ Cup Organic Unsweetened Applesauce
- ¾ Cup Organic Honey or Agave Nectar
- 2 Eggs
- 4 Overripe Bananas
- ½ Cup Semisweet Dark Chocolate Chips
- ½ Cup Chopped Walnuts
- Preheat oven to 350 degrees & lightly spray a 9x5 loaf pan with your favorite nonstick oil.
- In a large bowl combine flour, baking soda and salt
- In a separate, yet equally large bowl mix applesauce & honey/agave. Stir in eggs and mash up the bananas until it is a gooey mushy blend.
- Stir in chocolate chips and walnuts until mixed in well.
- Add the flour mixture to the banana mixture and continue to stir until everything is blended well.
- Pour the batter into the loaf pan and put in the oven.
- Bake for 60-65 minutes (double check the bread is done with a toothpick to ensure everything has baked).
- Let it cool for 15 minutes and then turn out onto a wire rack.
