No need to keep this a secret! I’m on a mission, to simplify healthy eating for women. Maybe you’re a corporate gal who is sick of spending $15 on a salad. Or maybe you’re a SAHM who doesn’t have time to constantly make herself a healthy lunch with the kiddos running around. Perhaps you cave on the weekends and need something readily available because you’re just not in the mood to cook. Whatever the reason, I have a new recipe for you.
Meet the One Pan Zesty Italian Grab & Go Lunch {or Dinner}
Here’s what you need:
- 1-2lb chicken breast
- Your favorite veggies {mine used for this recipe are listed below}
- Green beans
- Asparagus
- Cherry tomatos
- Red Onion
- 2 minced garlic cloves
- Evoo
- Italian Seasoning {I love Morton & Bassett Spices}
Once you have everything you need, creating this meal is as easy as 1, 2, 3!
- Preheat oven to 425 degrees. While the oven is warming up, slice up chicken to about 1.5″ pieces and chop up your veggies.
- Line a cookie sheet with foil (or skip if you would like). Toss the veggies & chicken in 1TBSP of EVVO and Italian Seasoning. Mix to coat evenly and spread out on a pan. If your pan is overflowing {like mine usually is}, get out another sheet – the more the merrier.
- Bake for 17-20 mins depending on how crunchy you like your veggies! Once done you can evenly portion out the chicken and veggies into grab & go containers. If you want to add a carb, brown rice or quinoa will do! I love Seeds of Change microwave packets. You can find these online at Amazon & sometimes Costco has a family pack of the quinoa & brown rice packet!
