Not Your Mother's Banana Bread

- 2 Cups Brown Rice Flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ Cup Organic Unsweetened Applesauce
- ¾ Cup Organic Honey or Agave Nectar
- 2 Eggs
- 4 Overripe Bananas
- ½ Cup Semisweet Dark Chocolate Chips
- ½ Cup Chopped Walnuts
- Preheat oven to 350 degrees & lightly spray a 9x5 loaf pan with your favorite nonstick oil.
- In a large bowl combine flour, baking soda and salt
- In a separate, yet equally large bowl mix applesauce & honey/agave. Stir in eggs and mash up the bananas until it is a gooey mushy blend.
- Stir in chocolate chips and walnuts until mixed in well.
- Add the flour mixture to the banana mixture and continue to stir until everything is blended well.
- Pour the batter into the loaf pan and put in the oven.
- Bake for 60-65 minutes (double check the bread is done with a toothpick to ensure everything has baked).
- Let it cool for 15 minutes and then turn out onto a wire rack.
