Not Your Mother's Banana Bread

Create a healthy alternative to your Mothers banana bread! This is guaranteed to be a crowd pleaser!
Ingredients
  • 2 Cups Brown Rice Flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ Cup Organic Unsweetened Applesauce
  • ¾ Cup Organic Honey or Agave Nectar
  • 2 Eggs
  • 4 Overripe Bananas
  • ½ Cup Semisweet Dark Chocolate Chips
  • ½ Cup Chopped Walnuts
Instructions
  1. Preheat oven to 350 degrees & lightly spray a 9x5 loaf pan with your favorite nonstick oil.
  2. In a large bowl combine flour, baking soda and salt
  3. In a separate, yet equally large bowl mix applesauce & honey/agave. Stir in eggs and mash up the bananas until it is a gooey mushy blend.
  4. Stir in chocolate chips and walnuts until mixed in well.
  5. Add the flour mixture to the banana mixture and continue to stir until everything is blended well.
  6. Pour the batter into the loaf pan and put in the oven.
  7. Bake for 60-65 minutes (double check the bread is done with a toothpick to ensure everything has baked).
  8. Let it cool for 15 minutes and then turn out onto a wire rack.
