I don’t know how it came to me, perhaps in a dream but I have been lacking on my veggie intake. If you know one thing about me, you will know I have a love for majority of veggies (minus egg plant – yuck!) but for some reason, I just wasn’t getting my usual veggie intake. I’m not sure if it was because I was overwhelmed with all the chopping I do on a DAILY basis or if it was because we had some Girlscout cookies in the house. Regardless, I was being l.a.z.y!
I decided it was time to step it up! Viola! Meet the fool proof way to increase your veggie intake! A massive pre-made simple salad you can grab quickly throughout the week! Here is what I decided to put in my salad:
- Romaine Lettuce
- Carrots
- Tomato
- Cucumber
- Celery
All I needed to do was chop, chop chop! TBH, I also took the easy way out…I purchased the shreded matchstick carrots and tomatoes I kept whole. So it was even LESS chopping (just the lettuce, cucumber and celery). You really can make this with any veggie you would like!
Once I had the bowl full, I mixed up the salad and was able to quickly have a side salad for lunch or dinner throughout the week! My husband even had salad – which it’s a rarity for him to grab vegetables!
I hope you find this find it less daunting to up your veggie intake! This was fast, easy and delicious as I could change out the dressings each time I had a salad!
